Olive Grove
The thousand Campi di Fonterenza olive trees are located in the nearby region of Cinigiano, on a hill facing Monte Amiata just over 300 metres above sea level. A pre-existing olive grove over 50 years old was integrated with new olive trees.
The olive trees grown are those of Tuscan tradition -. leccino, moraiolo, oriolo, frantoiano, correggiolo, pendolino and olivastra seggiansese. From these different varieties, four different oils are made - “Leccino” “Frantoiano” “Moraiolo” and the “Blend” in which all the aromas of the harvest are harmoniously mixed.
The choice of picking each cultivar separately when the olives reach the best moment for harvest, makes it possible to produce olive oil of extremely high quality.
The harvest takes place by hand and is done with all speed, following the different ripening times of each tree variety. The tough selection process that the olives undergo, the immediate pressing, followed in person by the sisters in a local trusted olive press, are rewarded by an Extra Virgin Olive oil that has been described as “twenty four carat”
